Cooking for one

Well, week two is done and I'm loving this y'all! Portland is amazing. I love the facility I landed at and the people I work with (You still win NAMC NICU peeps! : ) ). I am hoping this week to take care of some post surgical little ones. They do most surgeries here in house with the exception of open heart procedures. Those little ones are sent down to Boston Children's Hospital. The patients here come from all over Maine as well as New Hampshire, Massachusetts and Vermont. The exposure to different patient populations ( Lots of French and Portuguese speaking immigrants here) and such a varied array of disease processes in the neonates means that every shift brings something new to learn and master. I love it!


Do you know what I don't love? Having to cook for just myself. Guys. I don't know how to do it! It has been a really long time ( A REALLY LONG TIME) since I have had to. But Kenny has gone back to Texas for a few weeks, and I am by myself again. So, cooking for one it is.


All the articles on healthy eating for travelers focus on advanced prepping and meal planning. Ok, sure. Makes sense. Saves money and time. Right. Got it. But time for a confession, I am too much of a foodie food snob for meal planning to work for me. What I thought sounded good for dinner (or lunch or breakfast) when I planned it doesn't sound good anymore by Wednesday. Plus, I love cooking! I look forward to time in my kitchen. It's when I do my best thinking and how I express my love for those around me. (Cue my focaccia bread).


So here is what I need: your favorite 30 minute or less meals for days when I am working. Breakfast, lunch or dinner. Even desserts! All ingredients are fair game. You can use the contact me section below to send them to me or email the recipes directly to me at Susand.dwight@gmail.com. I'd like to post a recipe or two up each week for other travelers to try. Plus if you are a traveler yourself, send me the tips and tricks you use in the kitchen and I will share these as well.


I'll start the recipe exchange : My famous focaccia bread. It isn't a 30 minute recipe, so make it on your day off, but make it once and you will be hooked for life. And yes. I did bring my mixer to Maine. I did tell you I was a foodie food snob...
